●About the Product
Kuzefuku's original ponzu (citrus juice) is lavishly used. The three citrus juices, Yuzu (from Kochi), Sudachi (from Tokushima), and Yuko (from Tokushima), are all squeezed whole with just the right amount of force.
In Kochi and Tokushima prefectures where aromatic citrus fruits are grown, citrus juices with strong acidity are called "Yuzu-zu" or "Sudachi-zu" and have been used in place of vinegar in a variety of dishes since ancient times. Ponzu has also been used for a long time, with each household making its own instant homemade ponzu vinegar.
Kuzefuku's original ponzu is a lavish use of citrus juice in place of this vinegar.
Yuzu (from Kochi), sudachi (from Tokushima), and yuko (from Tokushima) fruit juices are all squeezed whole with just the right amount of force, so they contain the aromatic components of the rind.
This juice is blended with soft-tasting seaweed salt (from the Seto Inland Sea), and the flavor of dried bonito flakes and kelp is added to create a rich and mellow aroma.
It can be used for a wide range of dishes such as shabu-shabu, vinegared dishes, and gyoza.
Salt ponzu is not often seen in Japan. Please consider purchasing it.
